bet mashed potatoes EVER

we all know I enjoy hyperbole as much as the next guy, but seriously peeps, I’m forreal this time.

I made these mashed potatoes and I should have saved more for myself. I brought them to my Thanksgiving reunion and I could have seriously just ate a plate of these by itself.

Let me share…

You will need:

  • potatoes (red-skinned, yukon, you-name-it)
  • heavy cream
  • butter
  • herbs
  • garlic

First, peel and cut the potatoes. Boil. Drain. Let the steam escape.

Roast the garlic. Depending how much you’re making you could just cut off the tops and roast the whole thing. That’s how I roll. Drizzle some olive oil on that bad boy, wrap it in foil and pop it in a 400 degree oven for at least 20 mins. You’ll smell it when it’s ready.

Mix the butter and the herbs. I used a whole stick because I was serving upwards of 20 people, so it’s not as bad as it sounds. I used thyme, dill, and rosemary and it rocked.

Mash up your taters, add the butter in chunks, and use heavy cream for Pete’s sake! I’m serious. If you want them to taste delicious you will listen. I’ve tried using regular milk and I could just tell something was missing. I used one of those tiny containers from the store. It was just enough. Again, spread out over 20+ people, not so bad. If you’re only making enough for a few people, I would say a few tablespoons – a quarter cup should do the trick.

Add salt and pepper and ENJOY! you just made the best potatoes EVER!
