HEEEYYY YOU GUYS!!!!
I have a new blog header and look now that I am officially turning myself into a food blogger. I’m thinking next month I will make the plunge and buy a new awesomesauce camera to help those efforts. So before I get into the yumminess, go check out my page (if you’re in a reader!)

That is the “after” of my beet smoothie adventure. I was flipping through my latest SELF magazine and it said something along the lines of… “have leftover beets you don’t know what to do with? make a smoothie!” and then a little lightbulb went off in my head and I said, heck yes I happen to have those ingredients (pear, apple, beet) I will march myself into the kitchen and make myself a smoothie!

Of course SELF had to be all bare bones, just the fruit and veggies. Well, SELF, let me tell you something, I need sugar and flavor in my life. To stay on the healthy end, I recommend either more fruit than beet, agave nectar, honey, or something else that is “naturally” sweet to make this inviting instead of forcing it down. Be careful when you handle beets, the color will transfer instantly, but if you wash your hands within a few minutes you’ll be ok. Your tea towels will also be ok in case you manage to drop the beets on them and wash them two weeks later.
I used one apple, one pear, one (large) beet in the first blend (and a handful of ice). I poured it up and yup, you guessed it… it still tasted like beets. Luckily I had some peaches in light juice that I added to sweeten it up. I added a few sections of peaches and whipped it up and I had something that tasted pretty good. I sat down and finished flipping through my magazines while watching DVRd episodes of the Bachelor. #goodtimes
Anyone else make anything with what seems like an odd ingredient lately?
Recipe: Beet Smoothies (adapted from SELF magazine)
- 1 apple
- 1 pear
- 1 beet (small to medium sized)
- 1 cup of ice
- honey or agave nectar to taste (start with 1 tbsp)
Note: Pears or apples can be replaced with other sweet fruits or berries and I bet it would taste awesome!
Directions:
Chop ingredients into bite sized chunks. Place into a blender with the ice and sweetener of your choice. Blend into smooth consistency. Enjoy!
